From the bustling environment of The Yard Food Park to the friendly atmosphere of Checkpoint 221, Sederia Shantel’s Filipino food truck, Nanay’s Ba-Hi, has quickly established itself as an integral part of Salem’s culinary scene. But Sederia’s success is not just about serving mouthwatering dishes; it’s rooted in perseverance, the lessons from her mentors, and her deep connection to her family and her heritage.
A McKay High School alumna from the class of 2011, Sederia first tasted the food industry as a host, gradually working her way up to a server at the Sassy Onion restaurant. These formative years provided her with essential lessons about the industry and a realization of her passion for food. Her aspirations drove her to the University of Oregon, where she acquired a degree in business and economics by 2015. While many would have taken the traditional corporate route, Sederia’s heart was set on creating something of her own. After her stint at The Ram restaurant, she took the bold step in 2017 to launch her food truck venture, Nanay’s Ba-Hi.
Sederia’s dedication bore fruit quickly. Within just five months of starting Nanay’s Ba-Hi, her business was awarded silver in the ‘Best Food Trucks’ category in 2018’s Best of the Mid-Valley. This accolade not only fueled her drive but also affirmed that her commitment to quality and authenticity was resonating with patrons.
But like every entrepreneur, Sederia faced her set of challenges. The global upheaval of 2020 due to the pandemic compelled her to recalibrate her business model. While others saw adversity, she perceived opportunity, pivoting to the Beehive Food Pod and experiencing exponential growth thereafter.
Integral to her journey was the guidance she received from her mentors. Shannon, owner of The Yard Food Park, has been a guiding force since Sederia joined her food pod in August 2022. Additionally, Jake Doan of Shaka Brah, with his extensive experience in the food business, provided invaluable advice. Their insights, combined with Sederia’s never-ending quest for learning, propelled her to new heights.
Each plate she serves, especially the signature ‘Get In My Beelly Plate,’ tells a story. It’s a tribute to her grandmother, who was her inspiration from the Philippines. “Every dish I serve is a nod to my family, my roots, and the memories of home-cooked meals that shaped my love for cooking,” says Sederia.
His advice for budding entrepreneurs? “Find someone in your field of interest who has achieved the success you’re seeking. Build a relationship, and they’ll likely propel you along with them.”
Sederia is a force to reckon with. Her dedication to continuous learning, through platforms like podcasts and authors like Robert Kiyosaki and Dave Carnegie, and her intentionality in all aspects of life, ensure that she remains at the forefront of her industry.
